Salad:
1 endive
1 bunch watercress
½ head romaine lettuce
1 orange, peeled and cut into
round slices
1 avocado, peeled and sliced
2 pitted dates, diced
¼ c. dried cranberries
1.) Wash, separate, and shred greens. Combine into a
salad bowl.
2.) Add other ingredients.
3.) Just before serving, pour dressing on salad and toss.
Salad Dressing:
¼ c. balsamic vinegar
1 clove garlic, peeled and crushed
dash of salt
1 tsp. Honey
1 tsp. Dijon mustard
freshly ground pepper to taste
½ c. olive or vegetable oil
1.) Combine all ingredients except oil.
2.) Slowly whisk in oil and pour over salad.

Serves 6 - 8
