CHICKEN SOUP WITH LUFT
KNAIDLACH
175g/6oz/3/4 cup medium-ground matzo meal
150ml/1/3 pint/ 2/3 cup cold water
5ml/1 tsp salt
pinch of ground ginger
3 eggs, well-beaten
90ml/6tbsp oil
1 quantity Chicken Soup
SERVES 12
Mix the matzo meal with the water, salt and ginger.  Add
the eggs and oil and chill the mixture in the fridge for a
few hours.

Form the mixture into small balls about 2cm/3/4in
diameter, wetting your hands or dipping them in a little
more meal as you work to prevent the mixture from
sticking.  Don't add too much meal or it will make the
dumplings heavy.

Bring a large pan of water to the a boil and gently put in
the knaidlach.  As the water comes to a boil again, they will
rise to the surface and double in size.  Cook in gently
boiling water for 20 minutes.

Meanwhile reheat the Chicken Soup.  Drain the knaidlach,
pouring away the cooking water and float the dumplings in
the soup.  Transfer to soup bowls and serve.
