CHICKEN SOUP WITH
MATZO KLEIS BALLS
2 matzot (sheets of unleavened bread)
1 onion, chopped
30ml/2tbsp oil
a handful of parsley
2 eggs
30-60ml/2-4 tbsp medium-ground matzo meal
pinch of ground ginger
1 quantity Chicken Soup
salt and ground black pepper
Soak the matzot in cold water for about 5 minutes and then
drain and squeeze them dry.

Fry the onion in the oil until golden.  Chop the parsley,
reserving a few sprigs for garnish.  Whisk the eggs slightly.

Mix together the soaked matzot, fried onion, parsley and eggs.  
Season with salt, pepper and ginger and add about 15ml/1 tbsp
of matzo meal.  Chill for at least 1 hour.

Roll the mixture into small balls, drop them into the fast-boiling
soup and cook for about 20 minutes  Serve, garnish with parsley.
