MAKES 12 POPOVERS
These popovers make a festive holiday dessert when filled
with preserves, stewed dried fruits, or sweetened whipped
cream and nuts. They are also great for school lunches when
filled with slices of meat, tuna, or cheese.
1 c. water
1/3 c. peanut oil
1/2 tsp. salt
1 c. matzo meal
4 eggs
1 jar fruit preserves, or 1 pint
whipped cream, sweetened
Bake time 1 hour
Preparation time: 1 hour
1.) Preheat oven to 450 F.
2.) In medium saucepan, bring water
and peanut oil to a boil.
3.) Add the salt and matzo meal and
continue cooking and stirring until the
dough no longer sticks to sides of pan.
4.) Remove from heat and add
unbeaten eggs one at a time, beating
thoroughly after each addition.
5.) Drop dough by the teaspoon-
ful on lightly greased baking sheet and
bake for 25 minutes.
6.) Reduce heat to 325 F and bake 30
to 40 minutes or until browned.
7.) When cool, carefully slit along one
side and fill with fruit preserves or
sweetened whipped cream.
* For a low-fat alternative to
whipped cream, substitute
a nondairy topping.
